This is a good tale of restaurant redemption at Zachary’s BBQ in Norristown. My wife ordered the “sliced to order” brisket, but after a 15 minute wait was served what were essentially “burnt ends.” While those are a BBQ delicacy in themselves, it was not what she had expected. She declined waiting another 15 for a replacement. Still, the pitmaster brought her out a dish sliced fresh out of the smoker before the meal was finished.
